The sunchoke (a.k.a. Jerusalem artichoke) is related to the sunflower (not the artichoke). They have a sweet, nutty, crunchy quality and can be prepared in a number of ways. Try them raw, shaved thinly and added to salad, or pureed and mashed like potatoes.
Raw sunchokes should be stored in a cool, dry, and well-ventilated area away from light. They may also be stored in the vegetable drawer of the refrigerator, wrapped in paper towels to absorb humidity, and sealed in a reusable container.
