Brussels sprouts are a part of the cabbage family but are grown on a stalk. They can be fairly bitter, but roasting them helps break down the bitterness and turn them sweeter. However, their bitterness is sometimes leveraged and they're sliced or shredded into a fresh salad.
Store in a plastic bag (the often included green compostable bags are best) in the crisper drawer. While best in the first three to five days, they can often last for up to a couple weeks and still be great for roasting.
