Green bell peppers are picked before they have fully matured and therefore these peppers are often classified as “unripened” among all other peppers. Because they're prematurely harvested, they have a slightly bitter flavor and will never have the sweet taste of their red, yellow and orange counterparts (which are further along the maturity/ripening journey).
Green bell peppers last a bit longer than the red, yellow, and orange ones as they're techincally unripened. They'll keep for 2-3 weeks in your crispers. But if they get a few wrinkles or softer skin, just use them in your next omelette or sautee.
