Leeks are deliciously mild in flavor, and wonderfully versatile in the kitchen. You can use them cooked or uncooked; in soups, stews, casseroles and salads; or prepared simply on their own for an easy and satisfying winter dish. The tops of the leaves, the dark green parts, are equally as flavorful but just need a slight bit more cooking to soften them up.
Fresh leeks should be stored unwashed and untrimmed in the refrigerator, where they will keep fresh for between one and two weeks.
