Purple carrots are a fun switch from their orange cousins! Even though they are purple, they still contain a high beta carotene content. 

They get their purple from anthocyanins, a group of antioxidant flavinoids that help combat oxidative stress.

Enjoy them the same as you would purple carrots- fresh or cooked. The insides are often white but can be purple.
