Description
This mushroom ravioli combines the best of three wild mushrooms—porcini, shiitake, and crimini—with creamy ricotta and Parmesan. The earthy mushrooms bring depth and richness, while the parsley adds a touch of brightness. Pairs beautifully with the creamy tang of goat cheese, the nutty depth of pecorino, and the earthy aroma of sage. A splash of white wine would add a touch of acidity as well, balancing the savoriness of the mushrooms.
Storage
Can freeze in double ziploc for several weeks (doubling helps prevent moisture removal and freezer burn. When remove from freezer, wipe lid of moisture. Once thawed, use within ~5 days.
