This bright red fungi is actually two fungi! Originally a species of russula that a secondary fungus "took over" and gave it that beautiful red color and ocean-esque flavor. 

My favorite way to enjoy lobster mushroom is in a chowder! Add lobster mushrooms, onions, corn, garlic, potatoes, and cream. Throw it in a stew pot and blend it half way with an immersion blender once it's finished stewing.
