Also known as Sweet Tooth, the hedgehog mushroom is similar to the chanterelle with a fruity aroma but is distinct with it's "teeth" under its cap and a drier, nuttier, almost caramel-like quality. Use similar to Chanterelles in fried dishes or creamy stews (AKA chowder) as it has a hazelnut-like and delicate flesh.
