Mangos are sweet and are almost like a thick-skinned peach--though the taste is quite a bit more tropical. Most often eaten fresh, the hard seed in the middle can make cutting difficult. Sitting the mango upright, slice off about 1/4-1/3 of the way into the mango. Then, slice horizontal and vertical lines so that the mango is nearly cubed but still attached to the skin.
Mangos ripen through ethelyne production. So leave them on the counter (out of the sun) and they'll ripen in a few days (ripe ones yield to touch without being mushy, kind of like avocados). Once ripe, place in the fridge and it'll last for 5-7 days.
