Fennel has a flavor similar to sweet anise seed & the classic black rope licorice! Usually seen in the spice cabinet as an aromatic herb, this vegetable is great fresh or cooked. When savored fresh, it has an almost celery-like crunch and delicious bright flavor! When roasted or sauteed, the texture becomes smooth and silky. 

You can eat the whole vegetable, but the hollow stalks can be a bit fibrous!
