The name says it all- they are striped red and white on the inside! These beets have a crunchy, earthy flavor when enjoyed raw but their natural sugars caramelize as their flesh gets more tender when cooked.
The brilliant candy-cane stripes tend to fade when cooked, making these great for thinly slicing and eating raw or lightly steaming to preserve their unique beauty!
To store beets, trim the greens 2 inches from the root as soon as you receive them. Do not trim the tail. The root bulbs should be bagged and can be stored in the refrigerator crisper drawer 7 to 10 days.
