Zucchini, Green Pepper, Cilantro, and Feta Quiche with Brown Rice Crust

Ingredients:

 

2 cups cooked brown rice
¼ cup gruyere, grated
1 egg
4 eggs
½ cup milk
2 cups zucchini, grated, squeezed and drained

½ cup green bell pepper,  cored, seeds removed, and chopped
¼ chopped cilantro
2 green onions, chopped
1 cup feta, crumbled
salt and pepper to taste

 

Directions:

 

Preheat oven to 450F.

 

Mix the rice, cheese and one egg in a bowl. Press the rice mixture into a pie plate, about 1/4 inch thick. Bake in preheated oven until the edges and bottom just start turning golden brown, about 5-7 minutes. Remove from oven and reduce oven temperature to 375F.


Mix the eggs, milk, zucchini, green peppers, cilantro, feta, salt and pepper in a large bowl. Pour the egg mixture into the pie crust. Bake in oven until golden brown and set in the center, about 30-35 minutes.







Patty Pan Grilled Cheese Sandwiches

Ingredients:


1 3-4” patty pan squash or a few smaller ones, ends removed and cut into thin slices

2 tablespoons butter

1 clove garlic, minced

Salt to taste

Melty cheese of your choice

Bread, cut into slices

 

 

Directions:


In a skillet, melt one tablespoon butter over medium heat. Add garlic and patty pan slices and sauté until tender, about 10 minutes. Remove from pan. Season with salt to taste.

 

Spread remaining butter on two slices of bread. Place on in the skillet, butter side down. Top with shredded or sliced cheese, then patty pan slices, followed by a little more cheese. Place second slice o bread on top with butter side up. Flip when cheese has begun to melt to make flipping easier. Cook until all the cheese is melted and bread is golden brown.
