Store them stem down in a coolish temp (ideally 55ish degrees) as they finish ripening and out of the sunlight. They'll ripen from their own ethelyne production, so don't set near other leafy greens. You can put them in the fridge, but the coolness will dampen their flavor and after several days, they'll start to become somewhat mushy.
