Named such because when cooked and then scraped out with a fork, it looks like spaghetti pasta and has a texture like pasta! But it probably won't fool any toddlers. The flavor is very mild (you might even call it bland) with none of that sweet, earthy, squash-like flavor we associate with butternut and acorn squash.
A great substitute for pasta/noodles when you want more nutrition! Pair it with a garlic olive oil sauce, traditional red sauce, or creamy pesto.

Being a winter squash, it tends to last the longest when stored in a dark, dry location that is about 50 degrees. About a month or so. When stored in the fridge, it won't last quite as long--closer to two weeks.
Peeled or sliced squash should be tightly covered with seran wrap or in a sealed tupperware container.
