Baby red beets are sweeter than "normal" sized beets. Because they're smaller, they're better-roasted whole without peeling. Just give them a good scrub before tossing into some olive oil and putting in the oven.

To store beets, trim the greens 2 inches from the root as soon as you receive them. Do not trim the tail. The root bulbs should be bagged and can be stored in the refrigerator crisper drawer 7 to 10 days.
