Jalapenos are red when they are fully ripe, though we usually see the younger, under-ripe green peppers at the store. A red jalapeno tends to be spicier than the green! If you happen to see brown stripes on the jalapeno, that doesn't mean it's been damaged! That is called corking and it actually corresponds to the peppers spice level - the more corking, the hotter the pepper!
