Fresh Tomato & Basil Sauce - Lagana's Recipe!

Lagana Pasta (WA)

Ingredients for serving 4 eaters:

1lb of Lagana Pasta
¼ cup extra virgin olive oil
1 clove of garlic, thinly sliced
2 lbs fresh tomatoes – chopped (the larger the chop, the chunkier the sauce.)
¼ teaspoon red pepper flakes
Salt and pepper to taste
8 fresh basil leaves (~1/2 bunch of sizable leaves), torn into pieces

Directions:
Combine the olive oil and garlic in a large sauté pan over medium heat, stirring
occasionally, until the garlic is soft and golden brown, about 2 minutes. Add the
tomatoes. Cook until tomato liquid reduces by half (about 8 minutes), stirring
occasionally.

Meanwhile, bring a large pot of water to a boil. Add 1 tablespoon of salt to the boiling
water then add strozzapreti and cook the pasta until it is just under-done, 2 to 3
minutes. Drain the pasta, reserving ½ cup of the pasta water.

Add the drained pasta and ½ cup pasta water to the sauté pan with tomato sauce. Add
red pepper flakes, and salt and pepper to taste. Continue cooking over medium-high
heat, stirring continuously, until the sauce thickens and coats the pasta. Add basil
leaves and stir to combine.

Divide the pasta between four warmed bowls. Enjoy!
